Bread poha is an excellent breakfast dish all over India. What better way one could come out with to revive stale bread!! Whenever we buy a loaf of bread from the supermarket, it needs to be used up within 2-3 days. And in my house, consuming the whole loaf in that limited duration is a fight, as the quantity is a lot and not too many bread-lovers in my household. So I always transform our aging daily bread into something that yields a magnificent healthy and filling breakfast. Toss in some veggies and there you have a nutritious dish.
This recipe is the most basic version wherein I have not used veggies, yet it is simple and delicious. You can go ahead and add some peanuts, potatoes and green peas for extra flavor and nutrition.
Ingredients:
Bread slices – 5-6
Onions – 1 large or 2 medium sized (thinly sized)
Mustard seeds – 1/2 tsp
Curry leaves – 7-8
Green chillies – 2-3 (chopped finely)
Dry red chillies – 2-3
Turmeric powder – 1/2 tsp
Coriander leaves – chopped finely
Salt – as per taste
Method:
Take the bread slices and roughly tear them into small pieces.
Take some oil in a pan. When oil is hot, add the mustard seeds. When mustard seeds start spluttering, add in the curry leaves, dry red chillies and green chillies. Stir for few seconds.
Add the thinly sliced onions. Add the turmeric powder. Saute until the onions turn pink.
Then add in the bread pieces, coriander leaves and salt. Mix well. Add some water and saute until everything is mixed through and heated.
Turn the heat off. Cover with a lid and let it stand for 2 mins.
Serve hot!
