The first time I read this recipe, I knew it is a sure winner. Every time my LO eats cauliflower, I trick her by stating it as Broccoli! I know what a shame! 😦 BUT! this time in fact when she asked me what is it!…I rather told her the truth…It’s Cauliflower! And her reaction was …”Hmmm I love cauliflower mumma!” ❤ ❤ ❤ What a relief! If DD loves it, you must rest assured about this dish being GOOD STUFF FOR SURE!
I have changed the recipe a little bit, to suit our Indian taste buds. Added a few spices and served it with chilled yogurt spinkled with dry herbs. {Confession: We Indians love our spices! :P} But the basic foundation for the dish remains the same. Parmesan Crusted Cauliflower Steaks
Ingredients:
1 head of cauliflower
Unsalted butter – 4 tbsp
Garlic Cloves – 2-3
Yogurt – 2-3 tbsp
Paprika – 1 tsp
Tandoori masala powder – 1 tsp
Mix of dry herbs (basil, oregano, rosemary, thyme, sage) – 1 tsp
Grated Parmesan cheese – 1/4 cup
Salt – as per taste
Black pepper powder – 1/4 tsp
Olive oil – 1 tbsp
Method:
Cut the head of the cauliflower into 4 parts (Quarters). Mix paprika, tandoori masala powder, dry herbs, salt and black pepper powder with the yogurt. Marinate the cauliflower well with this spice mix.
P.S> Be careful with the salt as parmesan cheese does have substantial salt content already.
Preheat the oven to 204 degree celcius.
Take a baking dish.
Add the butter and garlic cloves in whole. Sprinkle 1/2 tsp of dry herbs.
Add the parmesan cheese.
Place the marinated cauliflower steaks. Drizzle on top with some olive oil and parmesan cheese.
Pop it into the oven. Roast for 35-45 mins until the cauliflowers are well done.
I served the roasted cauliflowers with chilled yogurt sprinkled with dry herbs and spinach leaves salad.

Such a GREAT idea to cook cauliflower ! Indian cuisine is so aromatic and I’m always keen on trying new things. For years I had the wrong impression about Indian food only because I tried it at an English restaurant (sorry British people, I love you so much but you can’t cook Indian food properly ❤ ). Keep up the good work and I'd love to see some more of these easy aromatic dishes 😉

I cooked this yesterday with a mix of caul and broc. I didn’t use parmesan because it’s not a vegetarian cheese (we’re strict vegetarian) but I did add a little veg Cheddar for my partner. I think your adaptation looks much better than Melissa’s but we eat a lot of Indian food. I served it with the potatoes from poori bhaji and it was excellent. Thanks for the recipe which we’re calling tandoori veg here! Any suggestions fir other veg it might work with?

So glad you guys tried it and liked it! Yes you can do this with even potatoes or paneer (Indian cottage cheese). Marinade with the spices and pop into the oven. Potatoes will take longer, whereas paneer takes hardly 7-8 mins. Put the paneer on skewers and bake them. I will put up a post soon on paneer tikkas.
