What does one do when you decide on cutting carbs to lose weight? Cutting down on carbohydrates is the easiest way to lose weight and begin a bon voyage for healthy living. When we talk about carbs, the first thing that comes into our mind is rice. And cutting back on rice means moving on to healthier alternatives, like brown rice, millets
This pulao is a great way to include millets in your diet.
Ingredients:
Millets – 1/2 cup
Yellow mung lentils – 1/2 cup
Cumin seeds – 1/2 tsp
Asafoetida / Hing – a pinch
Bay leaf – 2
Onion – 1 large (finely chopped)
Garlic – 3-4 cloves (finely chopped)
Carrot – 1 (finely diced)
Dillweed – 1 cup
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Garam masala powder – 1/2 tsp
Green chillies – as per taste
Yogurt – 1 tbsp
Black pepper powder – 1/4 tsp
Salt – as per taste
Method:
Pick and wash the dillweed.
Wash thoroughly the lentils and millet.
Heat some oil in a pressure cooker. Add the bay leaf. Add cumin seeds and asafoetida (hing).
As soon as the cumin seeds splutter, add the finely chopped onions. When the onions turn pink, add the chopped garlic and saute for a few minutes.
Add in the diced carrots, mix and saute again for a few mins.
Now add the dillweed. Give everything a good mix.
Add the millet and lentils. Mix well and saute for a few seconds.
Now add water. For 1 cup of washed lentils and millet, I used 1.5 cups of water.
Add the turmeric powder, red chilli powder, coriander powder, garam masala, salt and pepper. Mix in 1 tbsp of whisked yogurt.
Pressure cook on a high flame until the first whistle and then on a low flame for 4-5 mins.
Once done, switch off the flame and let the pressure release on its own.
The millet khichdi or Millet Lentil Pulao will be ready to serve.
Serve this dillweed millet pulao with yogurt and pickle. Enjoy!!
Never heard of Millet Pulao….. low on carb means can be added to the menu…… looks good…..

My mother used to prepare khichdi from Millets… I guess pulav is a better option to feed kids such nutritious ingredient.
